Pancakes with Lemon Creme & Confite ♡ Recipe 

Serves 8 people - Prep Time 1hour 45 minutes stretched over two days 

Pancake Batter

100g flour ♥ 65g sugar ♥ 3 eggs ♥ 65g melted butter ♥ 1 tsp finely grated fresh ginger ♥ 1/4 liter whole milk

Lemon Creme 

2 sheets isinglass ♥ 150g good white chocolate ♥ 1/4 liter whipping cream ♥ finely grated peel of 1 1/2 lemon

Lemon Confite 

2 Lemons (filets of) ♥ 100g sugar ♥ 4 tbsp. water ♥ 1/2 vanilla pod ♥ 1 1/2 tsp corn flour mixed with a bit of water

 

Lemon Creme

Soak the gelatine/isinglass in a pint of cold water for half an hour. Finely chop the white chocolate. Bring the cream to a boil and remove from the heat. 

After 5 minutes, pour the hot cream over the chopped chocolate. Stir till almost all the chocolate it melted. Wring out the gelatine free of water and put it directly into the warm cream. 

When all the chocolate has melted, pass it through a sieve. Add the lemon peel and stir well. Lemon cream is cooled in the refrigerator for at least 3 hours or till next day. 

Pancake Batter 

Mix the flour and sugar, whisk well with the eggs. Melt the butter in the pan in which the pancakes will be cooked. Whisk melted butter and finely grated fresh ginger. Then beat in the milk. 

Fry the pancakes in a pan (25 cm in diameter)

Lemon Confite 

Cut the top and bottom off the lemons. Let the lemons stand on the bottom and then cut the peel off with a sharp knife. Now cut the "naked" lemon filleted by constantly cutting along the slats. 

The 1/2 vanilla pod is split lengthwise. The vanilla corns inside are scraped out with a small knife and crushed with a bit of sugar with a spatula, so that the seeds/grains get separated. 

Vanilla, the empty vanilla pod, sugar, lemon fillets, and water are boiled up briefly and thickened with a little corn flour soaked in a bit of water. Only thicken it a little, not too much. Cool completely before serving. The Lemon Confite can be stored refrigerated for 2-3 days.

The class with lemon wedges is for drinking - stay hydrated! ♡

Place the cold pancakes out on a table. Beat the cold lemon cream, airy and spread on pancakes. Roll the pancakes carefully together, put them on a platter with a straight surface, and cover. Place the platter with pancakes in the refrigerator 1-2 days before serving. Cut each of the very cold pancakes into two oblong slices - ends are not used. Arrange the slices elegantly on top of each other. Gently heat the Lemon Confit a little and serve immediately.

I made lemon pancakes! Lasse is at D&D all day, so I have been busy making his favourite dessert and doing practical things at home, working, and studying. I have made these pancakes many times before, and I even posted the recipe on here back in 2016, but decided it was time to share it again - with much better pictures! Very proud of how they turned out and how they are decorated. I wanted to make a round slice caramel this time, and it almost went really wrong - I should not handle hot sugar of any kind! Only burned my fingers a little ♡ Excited to see the pure joy on Lasse's face as he inhales all the pancakes!

We are putting up curtains (or roller shades/solar shades) in the bedroom and office, but ordering online is so default when you can't get a feel of the fabric, so we had some samples sent to us. When it comes to home and decorating I want it to be perfect - as I am going to look at it everyday and I want to feel home. Lasse doesn't care much - he is a very simple man! When we got the samples it was pretty clear that the first one (top left) is a no go! It feels so fake and leathery. Feels like a patch for bike wheels. The second one (to the right) is the most expensive and it does look and feel really nice, however I feel like the last one (bottom left) is a lot like it. Tough choice! And later we are going to go through it all again for the curtains (vertical blinds) in the living room ♡ What do you think?

Love this box! The hair scalp massager is something I have wanted for a while now and I am not disappointed! It is so relaxing to use in the shower while my hair conditioner is in. Also never used a primer before,  but I love this one - feels good on the skin, looks good under my makeup, and smells nice. And I am obsessed with the tinted lip balm - I can't put it down!

Today drained me! I spent the first part of the day cleaning the kitchen, and when Lasse got off work, we went for a quick walk with Haymitch before running a few errands. Haymitch got some antibiotics a few weeks ago, and the vet said they would call us - which they didn't, so I called them. He has had a runny tummy since the antibiotics, and the vet said to give him some food and pills to help stabilise his digestive system - also said it was expected that antibiotics are rough on kitty tummies. We got some dry food, pate, and wet food. Then we only feed him this and one pill a day for 10 days. Poor Haymitch, but on the plus side, he is a champion when it comes to taking pills, and he absolutely loves this new food! As he should, the whole lot ended up costing 426 kroner!

After the vet, we went to pick up Scenty at my old place, but it hasn't arrived yet - which is odd because it was sent out on the 11th. Then we went grocery shopping, and we ended up having something as simple as chicken tenders with cheesy garlic bread for dinner - so healthy! Did taste really good, though. Today was really rough on me. The weather triggered my OCD like crazy, and the stress of that triggered my IBD, so I could barely stand on my feet when we were at the store. I felt so poorly, and when I got home, I just had to sit for an hour, and could barely get back up. After dinner, we binged some more Badehotellet, almost finished now. Got one and a half seasons left. Tomorrow we are sleeping in, but then getting a bunch of practical stuff done. Goodnight all ♡

 

Today we slept in, and when I got up, I did some laundry. Lasse went to D&D around 1pm and got back this evening. We must have been so exhausted the both of us, as we both fell asleep on the sofa and woke up at 3 am, then went to bed. I had little to no energy today, so I did my best to push through, and I am proud of myself for what I have accomplished today. Now we are going to binge-watch some Badehotellet (Danish series) before going to bed. I have an early meeting tomorrow before my last day of school - then exams are starting. My first exam is on Tuesday, and it is one of my Danish exams, which I should do just fine in. My other exams are on June 1st and June 19th, so got some more time to study. Very confident in Danish, the other one is Religion, and I do not have the same confidence there. I will do my best and let that be it. Ugh, and we also need to take out all this rubbish from the new furniture.

Making progress with our office. Needed some more tools, and that desk is heavier than you'd think! Lasse also got some more stuff from IKEA that needs to be assembled, and we got Haymitch a little stool thing that he can sleep on. He jumped right on it the minute I finished it, and he loves it! ♡
