We had Risengrød for dinner today, which is my favourite! Love the fact that they eat from flat dinner plates to make room for more cinnamon sugar on top! My inner child is very happy.
Speaking of child, it is Lasse's niece's birthday soon, so Lasse's mum and I sat online today ordering heaps of presents for her, and we ordered a few things from IKEA to ourselves as well.
We also spent a bit of time this afternoon measuring my body to keep track of weight loss and I bought a bathroom scale - so that I am excited about as well.

And here is another picture of Mercedes because she is sooo cute! And she behaved really well today while my physiotherapist was here (last time she barked). Physio went well; we agreed to increase my exercises a bit and add some floor exercise next week that will help strengthen my back and abdomen. Today was a really good day ♡

Cauldron Cakes & Butterbeer Latte

I remembered I once tried this old Tumblr recipe for cauldron cakes back in 2013, so I figured, why not try to recreate and possibly improve them? I never tried the pastry bit in them, so this was my first. They turned out absolutely horrendous, but tasted really good! And of course, they were served with Butterbeer Latte.

Marry Me Chicken

Time: 30 min
Amount: 4 People

Ingredients:
4 Chicken Breasts
30 g Flour
2 Onions, finely chopped
4 Cloves Garlic
2 tsp Dried Oregano
1 tsp Dried Thyme
½ tsp Dried Rosemary
200 ml Chicken Stock
250 ml Whipping Cream
15 g Concentrated Tomato Purée
1 Handful Fresh Basil
100 g Parmesan, finely grated
2 tbsp Olive Oil
10 g Butter, for frying

To Serve:
400 g Pasta

Method:
Pat the chicken dry with kitchen paper, then coat it in a mixture of flour, salt and pepper, making sure it is well covered on all sides.

Heat the olive oil in a sauté pan. Add the butter and allow it to foam. Fry the chicken for 2 minutes on each side over medium-high heat, until golden brown with a nice seared crust. Remove the chicken from the pan and leave it to rest on a plate for a moment.

Add the sun-dried tomatoes in oil, onion and garlic to the same pan and sauté for a couple of minutes over medium heat, until the onion has softened. Add the oregano, thyme, rosemary, chicken stock, whipping cream and tomato purée, and stir well to combine.

Return the chicken to the pan and allow the sauce to simmer for 10–15 minutes, until the chicken is cooked through. Meanwhile, cook the pasta. Stir the Parmesan and basil leaves into the sauce, then season the creamy sauce generously with salt and freshly ground black pepper.

Serve the chicken in the delicious creamy sauce with freshly cooked pasta.

Rainy day - which I am actually enjoying! I set a goal with my mentors that I will walk on the terrace twice a week, and today was my first. It's something I struggle with both physically and with my OCD, so I am proud of myself for doing it. Then I will do it again on Monday, right before my video meeting with them. I also start physical therapy this coming week, on Wednesday. Never tried it before, so I am both excited and nervous. Her name is Camilla, and she is coming here for at-home physical therapy.

Today we slept in, had a healthy breakfast, and then Lasse helped his dad with some stuff on the computer. Both his parents are away this weekend, camping, so we have the house to ourselves. We've made dinner and dessert - yum! All in all a very good day ♡

Been a bit achy all over today and just been fatigued, so had a quiet day in bed. Did, however, manage to call the number I was given yesterday about the physiotherapy. Talked to a guy who said he'd like to talk to my doctor, but he definitely thinks that at-home physiotherapy sounds possible for me. He'd call back in a few days when he's had a talk with my doctor - so that's good news!
Other than that, I've just been playing the Sims, resting, and then I had dinner, which was this delicious chicken pasta salad made by Lasse's mum.
The rest of the evening has been me struggling to stay awake for the boys, and now it is time for bed.
Night lovelies xx

This is not my week at all - but I am staying positive!

I slipped and fell in the bathroom this morning after my shower, and the fall was grim. I put my foot up on the toilet to dry off my leg and foot, and then my foot slides off the toilet, and my other leg just slipped right under me. I fell towards the sink but managed to move my head in time, so I didn't hit it on the edge. I fell to the floor, my knees and elbows taking my full body weight. My right shoulder dislocated and pushed in on my collarbone. My ankle twisted and I basically landed on the most sturdy plastic table tray ever - which, btw, I should almost do a review on because that is mad impressively made! So the rest of my day has been spent in bed rest. I am in a lot of pain, and to add to it, I also have a fever. It scared me so much, and I do fall often. Not long ago, I slipped on the living room floor and fell on my butt, then hid my head back on the floor. I am insanely clumsy!
While on bed rest, I ordered in some groceries and decided to spoil myself with a late brunch. I have stuff I need to get done tomorrow, so I am allowing myself the rest today, and that is it. Will take it slow tomorrow, but I can't stay in bed this many hours. Lasse is still at his dad's house with Haymitch and will come home within the next few days. I miss both of them so much, and I talk to Lasse on the phone several times a day - driving him crazy, I'm sure! Anyways, I will recover soon and obviously ignore all pain to get up and going sooner than my body allows me to.

We were able to borrow the really nice apartment again this weekend. We got here yesterday, and we wanted to do something easy for dinner, but somehow ended up cooking an entire Christmas dinner. Spent last night playing games and watching series. Today we slept in, boyfriend went grocery shopping while I cleaned up from yesterday. Then we just cuddled up on the sofa, binge-watching series. For dinner, I wanted to try something new and exciting - so we had escargots as starters. I had a hard time with the texture but was so much fun to try and would definitely do it again... in a few years! Actually really proud of myself for trying this and going through with it. I finished my portion! As the main course, we had quails which was also a first, and honestly, I was pretty nervous about cooking this entire meal in general as the smoke detector started beeping the second I turned the oven on - for no reason other than clearly mocking me. But nothing was burnt, and we all survived. For dessert, I made Mette Blomsterbergs Lemon Creme Filled Pancakes, which is very easy to make, and boyfriend practically inhaled it - to be fair it is THAT good! This evening has been so romantic and exactly how I imagined it. Just perfect ♡
